Simple Salad of Vegetables with Cheese

 A simple vegetable salad with cheese is a quick, nutritious and versatile dish for every day. The active cooking time is no more than 10 minutes - you just need to combine all the healthy vegetable ingredients. A hearty vegetable salad can be a great light lunch or a perfect snack.

 Servings: 6-8

 Ingredients:

  •  400 g canned black or red beans - rinsed and dried
  •  400 g canned corn (or 250 g fresh corn kernels)
  •  1/2 medium cucumber - finely diced
  •  60 g chopped cilantro
  •  Lime juice (from 2-3 fruits)
  •  30g chopped celery or green onion
  •  100-200 g feta cheese - crumbled
  •  70 ml red wine vinegar
  •  Sea salt, crushed black pepper and cumin - to taste

Cooking Method:

 1. In a large bowl, combine beans, corn, chopped cucumber, cilantro, celery and feta cheese, mix ingredients thoroughly. Add lime juice and vinegar, mix again and taste the salad. Add more lime juice to the salad, if desired. Season the vegetable salad with salt, black pepper, cumin to your taste.

 2. Serve a simple vegetable salad with cheese at room temperature or refrigerate for an hour before serving.
